Renowned chef David Kapay mentors Wodonga TAFE Cookery apprentices

Mr David Kapay, restaurant owner/chef at ‘Miss Amelie’ and newly-opened ‘Little Miss Wine Bar’ in Junction Place, central Wodonga, shared his skills and knowledge with up-and-coming apprentice chefs today at Wodonga TAFE.

David visited the McKoy Street campus today, from 8am to 4pm, for a masterclass in the commercial kitchen with Wodonga TAFE’s 3rd year apprentice chefs. He taught the students preparation and presentation of two menu items from his current menu at Miss Amelie; a scallop entrée and a duck breast main.

The eight apprentices involved in the masterclass are in their third year of apprenticeship in Certificate III in Commercial Cookery with a range of employers across the region, including D’micos Corowa, Atura Albury, Brick Lane Albury, Club Mulwala, and the Australian Defence Force (Army).

Ms Sarah Whitling, Teacher Cookery & Bakery at Wodonga TAFE, spoke of the importance of having industry chefs working with our apprentices and students. "Chefs across our local region are great mentors for our apprentices, with their current knowledge and relevant experience working in the very industry that our students are starting their careers in", said Sarah.

"David Kapay studied with Wodonga TAFE when he started his training in his chosen industry. He’s now done a 360, returning to this area with his family and establishing his businesses in Wodonga. We are also working with David to hold further classes with our 3rd year apprentices, towards the end of this year", continued Sarah.

Sarah also said that Andrea Burgio from Pinchos Catering and Andiamo Street Food will be on campus in June, teaching our first-year Cookery apprentices the finer details of making pasta.
