Apprentice Cookery students create pasta-perfection on campus

Our first year apprentice chefs cooked up a carbohydrate storm last week in the industry standard commercial kitchen located on campus. With the guidance of their cookery teacher, they created amazing drool-worthy pasta dishes that were available to be pre-ordered for lunch by Wodonga TAFE employees! #staffperks

Cooked to restaurant quality and presented at MasterChef standards, TAFE staff were able to select from:

  • Spaghetti Marinara
  • Fettuccini Carbonara
  • Veal Ravioli with Sage and Hazelnut Butter Sauce
  •  Potato Gnocchi with Napoli Sauce and Pesto.

 As Commercial Cookery apprentices, students are employed in industry and attend on campus workshops at Wodonga TAFE, one day per week from 8am to 4pm.

Individual training plans are developed in consultation with each apprentice’s employer. This ensures that the off-site training balances the on-site training that the apprentices receive in their workplace, giving them a well-rounded qualification with skills that they can take to any employment setting.

Throughout the commercial cookery apprenticeship, apprentices learn how to prepare, cook, and serve food across a range of hospitality settings and gain the skills and knowledge to be competent as a qualified chef or cook in a supervisory or team leader role in the kitchen. That kitchen could be in a variety of settings, such as restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops.

Learning throughout the course includes:

  • Producing dishes or meals of the following: poultry, seafood, meat, desserts, cake, pastries, breads, stocks, sauces, soups, appetisers and salads
  • Planning and costing basic menus
  • Preparing food for special dietary requirements
  • Using cookery skills effectively and producing using basic methods
  • Maintaining the quality of perishables, equipment and the premises
  • Knowledge of hygiene, safe food handling and WHS

To become a commercial cookery apprentice you need to find a workplace who is hiring apprentice cooks or chefs. Once you are signed up you will be working a full-time job with one day per week on campus working with our teacher to compliment the training you receive in industry.
